Super Simple Summer Smoothiesicles

Ah, summertime.

Isn’t this what its all about, for a little boy?

Get a dirt moustache and eat popsicles?

Methinks definitely, yes.

While I may not be able to stop our grass from scorching away in this exceptionally hot and dry Minnesota summer (mixed blessing, no water means the mosquitoes have been almost non-existent) I can certainly keep my children from withering up like raisins!

And i know, when its hot you’re like “Oh please, like I want to make anything besides ice cubes?!?” but I promise these are super fast and super easy.

You’ll need 1 qt of fresh or thawed strawberries and one overripe avocado, peeled and pitted.

Dump both into a food processor or blender and puree till smooth.  Taste test.  If it’s not sweet enough add 1/4 to 1/2 cup raw cane sugar and puree a few seconds more.

Pous into molds, or in my lazy case, dixie cups.  Allow to freeze for 40 minutes then insert sticks/spoons and finish freezing.

When they’re done you can dip them in chocolate shell (melted chocolate chips and coconut oil) or eat them plain!

Healthy and delicious, the avocado adds a fatty quality that gives it more of an ice cream feel.
